This is another great recipe for Seitan Roast and Grilling Rub that comes to us from Claire Peters and the Skeptical Vegan, Eric Lindstrom’s series “Give Peas a Chance.” Holds up amazing well on the grill!

To make the Seitan Roast:

1 + 1/3 C Vital Wheat Gluten

1 C Un-Chicken stock + bouillon for boiled water

Mix these ingredients together and knead until fully mixed and elastic – about ten minutes, or use mixer for 3-4 minutes (which is what Claire does). Form into a log and let sit for 5 minutes.

Boil a large pot of water and add un-chicken bouillon (1 bouillon per 2 cups water). After gluten has rested, form it into a log and cut into about 1/2 inch slices. Place slices in boiling water and turn heat to simmer, simmer for 45 minutes.

This stores well (refrigerate, freeze), so Claire usually at least quadruples this recipe.

Perfect for sandwiches, wings, lunchmeat, and making a seitan roast (don’t cut into slices).

Rub for Grilling (shown in Give Peas a Chance) episode:

2 tsp. onion powder

2 tsp. garlic powder

1 T brown sugar

3 T smoked paprika

1 tsp. cayenne, or to taste if don’t like it spicy

1 T chili powder

1 T black pepper

Mix spices together in a pan and dredge the roast on all sides, then grill outside (preferred) or in the oven.
