1 clove garlic

1 box silken tofu

3 T low fat Vegenaise or other vegan mayonnaise

1/4 C lemon Juice

1/3 C rice vinegar

Salt to taste

1 bunch cilantro

1/2 bunch parsley

1 bunch green onion

1 small red cabbage, finely grated

1 small green cabbage, finely grated

Add garlic to food processor first and mince. Then add all of the wet ingredients and salt to your food processor and blend until smooth. Once smooth, add cilantro, parsley, and green onion.

Put cabbage in a large bowl and begin to slowly add the chimichurri aioli, small amounts at a time and massage it into the cabbage with your hands.

Depending on how creamy you like your slaw, you might have some sauce leftover – which is great as dressing or for extra sauce on your tacos.
