Almost faster than fast food, this tempeh with marinara sauce from Chef Claire Peters is a great last-minute meal. Like kimchi and kombucha, tempeh is packed with prebiotics, a type of fiber that is great for increasing the beneficial bacteria in your gut.

Studies have shown that prebiotics help increase the concentration of good bacteria in the gut and benefit the overall immune system, among other health benefits.

1 pkg Tempeh

1-2 cloves Garlic

Fresh basil (handful)

Marinara or Tomato sauce to taste

Salt to taste

Add garlic to food processor and mince. Break your tempeh block into a few pieces and add to processor. Add spices and salt and pulse into a crumble. Saute in pan to lightly brown.

 Add marina or tomato sauce and serve hot over pasta!
